Jollof Rice

Cooking Ingredients:

  •            2lbs lean mince meat
  •            ½ cups of vegetable oil (polyunsaturated or canola)
  •            6 cups of water + Stock cubes (2-3) beef or chicken
  •            1 medium fresh tomato
  •            4 tbsp tomato paste
  •            2 large onions
  •            1 small cabbage
  •            2 medium carrots
  •            1 bay leaf
  •      4 cups of rice
  •     salt and pepper to taste

Cooking Method:

  •          Fry the meat in the vegetable oil until brown
  •           Remove meat and add onions, fresh tomato and tomato paste to the hot oil and fry until brown.
  •           Add water and bring to boil, then add cabbage, carrots, bay leaf, and seasonings, reduce heat and simmer for 20minutes.
  •           Remove vegetables and add the rice while stirring.
  •           Reduce heat and cover the pot. Simmer for 10 minutes.

This dish can also be made with beef or chicken.

The dish is sometimes referred to as Wollof Rice, Cheebu, Chebu jen (fish benaching in Senegalese).
