Chicken Kebabs
Chicken kebabs are a great favourite all over Greece. They are great for summer BBQS.
Ingredients
- 1 large onion, grated
- 2 garlic cloves, crushed
- 120ml/ 1/2 cup olive oil
- Juice of 1 lemon
- 5ml/ 1 tsp paprika
- 2-3 saffron strands, soaked in 15ml/ 1 tbsp boiling water
- 2 young chickens
- Salt and freshly ground black pepper
Pitta Bread to Serve
Serves 6-8
Method:
- Mix the onion, garlic, olive oil, lemon juice and saffron, and season with salt and pepper.
- Cut the chicken into small pieces, removing the bone if preferred, and place in a shallow bowl. Pour the marinade over the chicken, turning the chicken so that all the pieces are covered evenly. Cover bowl loosely with clear film and leave in cool place to marinate for at least 2 hours.
- Thread the chicken on to long kebab sticks. The kebabs can be barbecued or cooked under a moderately hot grill for 10-15 mins, or until the juices run clear when the meat I pierced. Turn them every now and then. Serve with warm pita bread.
